The stroopwafel, remade
A stroopwafel is two thin layers of waffle pressed around warm caramel. In the Netherlands it is an everyday thing — sold by the dozen, and often months old by the time it is eaten. Maison Pardi treats it as confectionery. One dough, three caramels, made to order.
Made fresh in Tokyo
Every stroopwafel is created in our Tokyo kitchen by hand. Pressed thin, opened while still warm, filled with our signature caramel, and closed by hand.
Three flavours, one dough
One dough carries all three. Everything else happens in the caramel.
- Coffee Caramel — roasted depth, folded in warm. European tradition meeting Japan’s coffee culture.
- Yuzu Miso — Kochi yuzu against Kyoto white miso, held together by caramel.
- Caramel Sea Salt — caramel and sea salt, with nothing in the way of either.

Cercle Pardi
Cercle Pardi is the house membership. It opens with a first purchase, or with a redeemed gift card, as Cercle Début. A second purchase within ninety days makes it permanent as Cercle. Cercle Privé follows at ¥40,000 in cumulative purchases, and arrives as a physical card. There are no points, no expiry, and no way to lose a place once it is held.
Amsterdam · Tokyo
The technique is Dutch. The ingredients are largely Japanese — yuzu from Kochi, white miso from Kyoto — chosen because they belong in caramel, not because they signal a country. Sacha Pardovitch grew up in Amsterdam with stroopwafels in the back of the car; the house he built is in Tokyo. Both cities are on the box for that reason.
The Tokyo flagship opens early 2027. Until then, Maison Pardi ships within Japan from its Tokyo kitchen.
